FABIOLA PADILLA

MIXOLOGIST AND FOUNDER OF BEKEB SAN MIGUEL DE ALLENDE

Fabiola Padilla is one of Mexico’s most visionary mixologists and the founder of Bekeb, her acclaimed bar in San Miguel de Allende. Rooted in tradition and driven by creativity, she crafts cocktails that honor Mexico’s ancestral ingredients while embracing modern techniques and elevated presentation. Each drink is layered with flavor, story and a deep respect for cultural origins.

Since opening Bekeb in 2019 - named after the Tzotzil word for “seed” - Fabiola has developed a distinct approach that highlights pre-Hispanic ingredients and ancestral processes like fermentation and distillation. Her menus reconnect locals with their roots and invite visitors to experience the complexity of Mexican heritage through flavor. Every detail is intentional, from the clarity of the ice to the

curve of the glass. Whether it’s crafting a cocktail or curating a full bar menu, her process begins with inspiration and ends in a multi-sensory experience—an homage to Mexico’s past and a vision for its future.
